Sri Lankan Ayurveda Mushroom Soup Recipe

(Total time approx. 30mins)

 

INGREDIENTS (For 4 people):

  • 1tsp oil
  • 1 onion
  • 180g mushrooms
  • 1-2 cup vegetable or chicken stock vege or chicken
  • 1+1/2 cup rice milk
  • pinch of cumin powder
  • 1tsp turmeric powder
  • 1 tsp lemon juice
  • salt and pepper to taste

COOKING METHOD:

  1. Chop onions and mushrooms
  2. In a pan, heat oil on medium high
  3. When it’s hot, add onions and cook until brown
  4. Then add mushrooms and cook for 3-4 minutes
  5. Add all other ingredients and bring to boil
  6. Cook for 20 minutes while stirring occasionally
