Sri Lankan Ayurveda Green Nut Salad Recipe

(Total Approx. time: 10-15 minutes)

INGREDIENTS (For 1 person)

Salad:

  • 1 cup baby spinach
  • 1/4 red onion cut
  • 1/4 nuts (your choice)
  • 2 tsp chopped parsley
  • 1/4 cup pomegranate seeds

Dressing:

  • Lemon juice
  • oil
  • honey
  • salt
  • a touch of pomegranate juice

METHOD

Salad:

  1. Lightly roast nuts and let them cool
  2. Peel and cut red onion, wash and chop parsley, cut and collect Pomegranate seeds
  3. In a small bowl, add all ingredients
  4. Toss and mix together until well combined

Dressing:

  1. In a small bowl, mix all the dressing ingredients together
  2. Mix well and pour over the salad

NOTES:

*This is a good hot weather dish and has a cooling affect on the body.

*Pomegranate and spinach is especially good for cleansing the liver, leading to better looking skin and overall feeling of health.
