INGREDIENTS (For 1 person)
- 1/2 cup rice
- 2-3 cups water
- 1-2 cups coconut milk
- salt to taste
- 1/4 cup chopped parsley / spinach
- Place water and rice into a pot and cook for 30 mins (until rice becomes soft and a bit sticky).
- Wash and chop parsley / spinach.
- When rice is a bit sticky, add coconut milk and salt, mix well.
- Add chopped parsley / spinach.
- Serve in a bowl
