Sri Lankan Curry Chicken Sandwich (Using left-over chicken curry) Recipe

(Total Approx. time: 10-25 minutes)

 

INGREDIENTS (For 1-2 person)

  • Left-over chicken curry
  • 2-3 slices of onion
  • 1-2 slice of tomato
  • 1-2 slices of red or green capsicum
  • Handful of spinach
  • 2-4 slices of brown bread
  • 1-2 tbs butter
  • *a toothpick
  • *mayonnaise is optional

COOKING METHOD (Cold Sandwich):

  1. Toast brown bread and set aside
  2. Wash and cut all vegetables
  3. Drain and remove chicken from left-over chicken curry
  4. Cut chicken into small pieces
  5. Butter toast (or use mayonnaise)
  6. Layer sandwich with all ingredients
  7. Cut diagonally and garnish with a dash of spice

 

COOKING METHOD (Hot Sandwich):

  1. Toast brown bread and set aside
  2. Drain and remove chicken from left-over chicken curry
  3. Wash and cut all vegetables
  4. Cut chicken into small pieces
  5. Heat oil in frying pan, add chicken and fry for 3-5 mins
  6. Add onion, capsicum and spinach
  7. Butter toast (or use mayonnaise)
  8. Layer sandwich with all ingredients
  9. Cut diagonally and garnish with a dash of spice
