Sri Lankan Egg, Pumpkin and Sweet potato Sandwich Recipe

(Total Approx. time: 15-20 minutes)

 

INGREDIENTS (For 1 person)

  • 1-2 eggs
  • 2-3 pieces of thinly sliced pumpkin
  • 2-3 pieces of thinly sliced sweet potato
  • 2 slices of onion
  • 2 slices tomato
  • 1 cut chili
  • handful of cut spinach
  • salt
  • pepper
  • 1-3tsp butter
  • 2 slices of brown bread
  • 2-4 tsp of sweet and sour sauce

 

PREPARATION:

* Toast brown bread and set aside

 

COOKING METHOD:

  1. Mix eggs, salt and pepper in a bowl.
  2. Heat butter in a pan, then pour in eggs, fry and keep aside
  3. Add more butter to the pan, add pumpkin and sweet potato
  4. Add onions and fry until brown, add chilli
  5. Butter toast, place eggs, pumpkin, sweet potato, onions, tomato and spinach on top
  6. Drizzle some sweet and sour sauce on top
  7. Sandwich together and cut diagonally
