Sri Lankan Potato Soup Recipe

Potato soup

(Total Approx. time: 35 minutes)

 

INGREDIENTS (For 2-3 people)

  • 3-4 potatoes
  • 1/2 cup of cut leeks
  • 1/2 onion
  • 4-5 garlic cloves
  • 5-8 curry leaves
  • 1/4 cup chopped parsley
  • 1-2 tsp butter
  • 4-5 cups water or chicken stock
  • 1 tsp salt
  • 1 tsp pepper

 

PREPARATION:

* Wash and grate potatoes, cut leeks, onion, garlic and curry leaves

* Chop parsley for garnish

 

COOKING METHOD

  1. Heat oil / butter in a soup pot, add the cut onions, garlic, curry leaves and leeks. Stir and cook until golden.
  2. Add all ingredients except parsley into the pot, cover with lid and cook on high for 20-30 mins.
  3. Mix well, turn off heat and garnish with chopped parsley
