Sri Lankan Fried Onion Sambol Recipe

(Total Approx. time: 30-40 minutes)

INGREDIENTS

  • 1/2 cup oil
  • 3-4 onions
  • 1/2 cup maldive fish
  • 2-3 cardamons
  • 2- cloves
  • 1 cinnamon stick
  • 1 tsp salt
  • 3-6 curry leaves
  • 1 dessertspoon tamarind paste
  • a piece of pandan leaf (rampe),
  • 1-2 tsp sugar

PREPARATION:
* Crush cardamons, cloves and cinnamon
* Cut all onions roughly the same size

 

COOKING METHOD:

  1. Heat oil on high and prepare paper towels for deep frying
  2. Deep fry onions, and place on paper towel to remove oil
  3. Deep fry maldive fish, remove and let oil drain
  4. In a pan, on medium heat, add crushed cardamon, cloves, cinnamon, curry leaves, salt, tamarind paste and pandan leaf, cook for a few minutes until aroma comes
  5. Add fried onions, fish and sugar. Stir and mix well
  6. Eat with coconut milk rice (kiri bath), or with rice and curry
