Sri Lankan Fish Termparadu Recipe

(Total time approx. 30mins)

INGREDIENTS (makes 2-4 servings)

  • 400g fish
  • 1-2 tsp salt
  • 1/4 tsp turmeric
  • 1 tsp pepper / crushed chilli
  • 2-4 tsp oil
  • 1/2 onion
  • 2-3 cloves garlic
  • 6-8 curry leaves
  • 1 pandan leaf (rampe)
  • 1 tomato

PREPARATION (~10mins)

* Wash and cut fish, sprinkle with salt, pepper/ crushed chilli powder and turmeric powder.

* Cut onions and garlic, slice tomato

COOKING METHOD (~20mins):

  1. Heat oil on high in pan, add onions, garlic, curry leaves and pandan leaf (rampe)
  2. Fry everything for about 5-8minutes, until onions start to brown
  3. Lower temperate and simmer in oil for 10-15 minutes, be careful not to overcook
  4. In a separate pan, fry tomato on one side for 5-8 minutes
  5. Place everything onto a serving dish, garnish with fried tomatoes or crushed chilli
