Sri Lankan Tempered Chicken recipe (Chicken Temparaudu)

(Total time approx. 35mins)

INGREDIENTS (makes 4 servings)

MEAT:
400g chicken

VEGETABLES:
1 onion
2 garlic cloves
2 ginger slices
2 green chillies (or 1/4 green capsicum)

SPICES:
1/2tsp pepper
1 tsp crushed chilli
6 curry leaves

OTHER
1 tbsp oil (coconut / olive / vegetable)
1-2 tsp lemon juice
2tsp salt

GARNISH (OPTIONAL)
Leeks

PREPARATION (~15-20mins):
* Wash and cut the chicken into thin long pieces, place in a medium-sized bowl
* Add salt, pepper, lemon juice and keep in fridge to marinate for about 10-20minutes

COOKING METHOD (~15-20mins):
In a pan, heat the oil on high, add the chicken piece by piece and cook until brown on one-side (about 8 minutes)
At the same time, cut onions, garlic, ginger, green chilli (or green capsicum) and curry leaves
When chicken is brown, add the onions, garlic, ginger, green chillies (or green capsicum) and curry leaves
Stir and cook until everything is tempered brown, about 5 minutes
Add pepper and chilli powder and stir again
Put onto a serving plate, garnish with freshly chopped leeks and / or sprinkled crushed chilli
