Homemade Sri Lankan Potato White Curry recipe

INGREDIENTS:

VEGETABLES:
2-3 medium potatoes (300-400g)
1/2 onion
2-3 green chillies

SPICES:
1. 1/2tsp turmeric powder
2. 2tsp fenugreek
3. 1tsp mustard powder
4. 2tsp salt
5. Pandan leaf (rampe)
6. 6 curry leaves

OTHER
200-300 ml coconut milk
1/2 cup cold water

GARNISH (OPTIONAL):
Curry Powder / Paprika powder / Chopped Chives

PREPARATION (10-15mins):

* Peel, chop and cube the potatoes into about 1cm pieces. Set aside in a bowl of cold water (this prevents them from turning brown)
* Slice onions, garlic and green chillies.

METHOD (40-45mins):
In a pot, add all vegetables, all spices and 2 tablespoons of salt and 1/2cup water
Heat until water starts to boil, about 10 minutes
Turn heat to a low simmer, and start to stir
Add the coconut milk and start to boil again until potatoes are cooked, about another 10 minutes
Check taste and if needed, add more salt to taste
Garnish with a dash of curry powder / paprika powder and/or chopped chives

YOU CAN KEEP IT 2-3 DAYS.
