400g chicken (thigh)
1 green chillie
1. 1 tbs raw cummin powder
2. 1/2tsp whole coriander
3. 1+1/2tsp salt
4. 1/4tsp fenugreek
small cinnamon stick
6 curry leaves
??1/2 t.s. masted powder or ground
200-300 ml coconut milk
1/4 cup water
2 tsps oil (coconut / olive / vegetable)
Or Chopped green onions
* Wash and cut the chicken into small sizes, roughly around the same size (this helps everything cook evenly)
* Chop onions and green chillies
METHOD (~25-30mins) :
In a pot, heat the oil on high, add the vegetables and spices and cook on high for about 2 minutes or until brown
Add the chicken and cook on high until the chicken is brown on one side.
Reduce heat to medium and then add the coconut milk
Cook until chicken is fully cooked, about 20minutes
For garnish, chop fresh spinach or green onions and sprinkle on top.
For a bulkier curry, add 1-2 chopped potatoes.
